Selecting the Spices
If you want to make the ultimate spiced latte then you must definitely include fresh ginger, peppercorn, cinnamon, cloves, and green cardamom in your chai.
You can either use them in the form of whole spices but to enhance the flavor you can grind them or crush the spices by hand.
Ingredients
- 1 cup milk
- 1 cinnamon stick
- 1 tsp. tea leaves
- 1 tsp. ground black peppercorn
- 1 piece of ginger
- 2 cups water
- 3 cardamom pods
- 5 cloves
Method
Step 1: Layout the Spices
Put the spices in a small bowl and grind them in a food processor. If you don’t have one, you can crush the spices by hand as well.
Step 2: Roast the Spices
Use a non-stick frying pan and roast the spices on low heat for 2-3 minutes.
Step 3: Brew Black Tea
Heat the water in a kettle. Put the kettle on the stove and once the water starts boiling, add black tea leaves and spices; brew for 8-10 minutes.
Step 4: Strain the Tea
Use a mesh or tea strainer, strain the tea and spices.
Step 5: Fill the Cup
Pour the tea into the cup. Only fill 3/4 of the cup. Save space to add milk later.
Step 5: Frothed Milk
Add frothed milk using an Espresso Machine. Serve and enjoy!
Dirty Chai Latte
If you are thinking that this chai latte is similar to a dirty martini then you are wrong! A dirty chai latte is just like your regular spiced chai latte except with the shot of Espresso on top for that extra caffeine kick.
Ingredients
- 1 cup water
- 1 tsp. black tea leaves (you can also opt for tea bags)
- 1 tbsp. syrup
- 1 tsp. spices
- 1/2 cup milk
- 4 ounces Espresso
Step 1: Prepare the Espresso
Using an Espresso machine make an espresso shot just the way you like it.
Step 2: Make the Tea
Put a saucepan on the stove. Heat the spices on medium for 2-3 minutes. Add water and tea leaves (or tea bag). Bring the whole mixture up to boil. Once it starts boiling after 2 minutes remove it from the burner.
Step 3: Strain the Tea
Use a strainer and pour the tea into a cup. Try to use a large cup rather than a small one. Only fill the cup with 3/4 chai.
Step 4: Add the Milk and Syrup
Take a saucepan, pour in the milk and syrup. Bring the mixture to a temperature of 150 degrees Fahrenheit. You’ll notice bubbles forming.
Step 5: Foam the Milk Mixture
The Espresso machine comes with a steaming Wand. Use that to create a foam on top of the milk. Allow the foam to set for 30-40 seconds.
Step 6: Final Touches
On top of the chai, add the milk (save some foam for later). Pour in the espresso and lastly add the foam on top. Sprinkle some crushed spices on the top.
If you prefer an extra spicy masala chai latte then you can skip step 3 in which you have to strain the spices.
The spices would just settle at the bottom of the cup. However, for this method remember to use a teabag rather than tea leaves.
